I have several API endpoints. They work fine, and I can edit them in settings-configution. But in the APIs interface, only the first API from the configuration page shows up.

Can you verify that you are using List view for the API endpoint page? We have an issue with folder view at the moment.
Ah, indeed, I was in folder view. List view works.
